In this work we have shown the prospects of using local fruit and berry raw materials for obtaining lemon essential oil. The main physical and chemical parameters of the peel of local varieties of lemons were determined. Samples of isolated lemon essential oil obtained by hydrodistillation were tested for authenticity. The main physical and chemical parameters of the obtained oil were determined. Determination and identification of the components of the objects were carried out using GC-MS. The dynamics of oil release was studied. Here we have also shown the decisive role in increasing the yield of essential oil of the grinding process and the acid-base treatment of raw materials.
