SBE is one of the enzymes that play a role in the synthesis of amylopectin which determines the starting point for branching amylopectin chains in the formation of starch. The purpose of this study was to create a 3D structure model of the plantain SBE protein using the SWISS-MODEL server. Prediction of 2D structures using SWISS-MODEL and ProFunc servers. The tertiary structure was predicted using the Phyre2 site then the results obtained were then visualized using the UCSF Chimera X software. While the model evaluation was using SWISS-MODEL. Based on the evaluation and assessment of model 01 GDP code: 3aml.1.A on Ramachandran Plots it has a favored area of 93.82%, a MolProbity score of 1.61, and a QMEAN value of 0.70. Model 01 has a good value of the 3D protein structure model.
