The nutritional needs of breastfeeding mothers must be fulfilled in order to maintain their health and ensure enough breast milk production. The purpose of this research was to improve and complement the nutritional needs of breastfeeding mothers whose main staple is rice by improving their nutrition intake through food formulation using local food sources such as cassava and mung beans. This research was also done to obtain the physical characteristics of analog rice from mixtures of cassava and mung beans and to obtain the optimal formulations and nutritional profiles of the analog rice produced. This research was conducted in two stages. The first stage involved physical property analysis and sensory tests of the analog rice obtained. The second stage involved analysis of the chemical profile of analog rice produced. The results obtained for the physical analysis were bulk density (0.463167 g/ml), water absorption (68.9667%), swelling power (4.85%), cooking time (4 minutes 28 seconds), and water content (6.403%). The chemical profiles of the best analog rice produced from a ratio of 60% cassava flour and 40% mung bean flour were ash 2.95%, protein 14.22%, fat 2.58%, carbohydrates 73.84%, 2.47% fiber, 385.08 kcal calories, flavonoids 0.25146 mgQE/g, and total phenolics 0.34811 mgGAE/g.
