The article presents the results of studying the influence of genotype of Simmental bulls on energy metabolism and the efficiency of protein use on the synthesis of meat products. It was found that bulls of the "Bredinsky meat type" consumed more gross metabolic energy and differed in the optimal ratio of the net energy of the product to the total volume of net energy released from the feed (feeding level). Characteristically, domestic breeding Simmental bulls were inferior in total energy content in shoulder meat to American breeding Simmentals and peers of the Bredinsky Meat Type by 14.3 and 17.4%, respectively. In addition, young Simmental breed of domestic selection was inferior to hybrid breeds with American breeding Simmentals in terms of protein content in the edible part of the body by 56.1 kg (19.4%), fat - by 1.3 kg (2.6%), bulls "Bredinsky meat type" - by 12.8 kg (22.8%) and 1.5 kg (3.0%), respectively.
