The article presents the results of studying the effect of a feed additive based on dried locust extract Locusta migratoria on the quality indicators of meat of Kazakh white-headed breed steers. As a result of the research, a positive effect of the additive on the chemical composition and culinary properties of the average meat sample, biochemical and other quality indicators of the long back muscle was established. The study also set out a detailed assessment of the amino acid (separately substitutable and essential amino acids) composition of meat of experimental animals. Bovines of the experimental group were distinguished by better indicators of biological value of the average sample of flesh and the longest muscle of the back. Thus, there was a decrease in the content of substitutable amino acids in the meat of steers of the experimental group compared to the control, indicating a higher proportion of complete proteins in the longest muscle of the back of experimental animals.
