The article presents a parametric description of a technological process, which covers the main groups of parameters characterizing. The parametric description of the process is presented in the form of a cellular structured matrix, which diagonal cells correspond to specific factors, while non-diagonal cells reflect information about the presence or absence of functional relations between them. The description of the meat processing technology in the form of a system of such parametric models allows conducting a formalized analysis of the technological system at the level of available knowledge with an assessment of equipment efficiency and expected product quality. In this case, each diagonal block is divided into composite elements (operations, sections, lines, etc.) with their parametric descriptions located along the main diagonal. As an example, the paper presents a fragment of a structural-parametric model of the meat chopping process in mincing machine. Also, a digital twin of the technological operation (cooking of emulsified meat products) is presented.
