The optimum concentration of the enzyme preparation for the biomodification of gluten is elucidated, which is range 0.2-0.6 % by weight of gluten. The effect of enzymatic treatment of gluten on its rheological, barrier, thermal and tensile properties of films is shown. In the treatment of gluten with lipopan 50 BG or fungamyl super AX the kinematic viscosity increases by 15 %, and the oxygen permeability decreases by 300 %. In the treatment of gluten with transglutaminase or L-cysteine increases the glass transition temperature by 14 %. Tensile characteristics of biomodified gluten is shown, elongation increases by 200 % using transglutaminase and stress increases by 80 % using lipopan 50 BG. The obtained results show the potential application of biocatalytic treatment of gluten to improve the viscosity of solution applied to paperboard.
