Ultrasound-assisted enzymatic method of extraction (UAEE) is one of the green extraction methods that can be used for the extraction of active compounds from herbs. UAEE has advantages such as environmentally friendly extraction conditions, low investment costs and energy requirements are relatively small. The use of enzymes in this extraction method will catalyze the hydrolysis of cytoderms and glycoproteins, thus improving the release of bioactive compounds. This method can be used for the extraction of active compounds in medicinal plants, such as for the treatment of hypercholesterolemia. Phytosterols, that can be found in Keji Beling (Strobilanthes crispus.) leaves, when consumed will compete with cholesterol for absorption in the digestive system. The optimum extraction conditions with a maximum extraction yield of 39.99% are as follows: the concentration of ethanol is 50%, the amount of added enzyme is 70 mg/g and the enzymatic hydrolysis time is 2 h. Crude extract from keji beling is tested using Liebermann-Burchard (LB) reagent to identify phytosterols. The objective of this study is to evaluate the extraction of active compounds from keji beling herbs by using ultrasound-assisted enzymatic method.
